Hallmark Hotels is proud to launch our new spring and summer menu. Over the last couple of years, we've worked hard to create a Hallmark restaurant brand, looking at what’s selling well, what our guests like and wider food trends to give you the best dining experience we can.
Served at the Hallmark Grill in 24 of our hotels, the new menu includes seasonal and local sourced foods whenever possible, mixing light bites, the best of British and international favourites. Of course, our classic dishes stay, but each has been improved to make sure they taste better than ever.
We are incredibly proud of the finished menu. And a lot of the credit must go to our Head of Food and Beverage, Andy Lowe, whose team taste tested and refined a huge range of dishes and ingredients to give you the best dining experience possible. Of this process, Andy said:

The Hallmark Burger
The meteoric rise of the gourmet burger means no menu is complete without this crowd favourite. Made with the finest beef pattie, wedged between a brioche bun, and topped with glazed red Leicester and mature cheddar cheese rarebit, the Hallmark Burger is hard to beat for meaty magnificence. Served with American slaw, tomato relish and skinny fries, you’ll want to lick the plate clean.
Classic Hallmark Black Rice and Quinoa Salad
Sometimes labelled with extravagant-sounding names like ‘forbidden rice’, black rice is super healthy and packed full of antioxidants. Fused with exotic pomegranate, crisp kale and greens, chilli roasted seeds, and drizzled with a dark soy and ginger dressing, our quinoa salad is the ultimate refreshing bite when it’s hot out. It also pairs well with the lighter beers and wines people like to drink in the warmer months.
Plaice are commonly caught between March and September, making them the perfect seasonal catch for our spring and summer menu. A superb fish that possesses a fine, moist texture and subtle but distinctive flavour, plaice is a fleshy and tasty treat. Pan-roasted and served with melting nut-brown butter, English parsley, caramelised lemon and new potatoes, Hallmark’s whole plaice has become a hugely popular pick with our guests.
