Quick family dinner recipes for September evenings

As we’re between two seasons, September food should not be too heavy or too light, so here are three quick and delicious family dinner recipes for you to consider. Each one feeds a family of four:

Quick chicken

A simple dish that shows that tasty needn’t mean time-consuming. Ingredients:
  • 4 skinless chicken breasts
  • 4oz Dijon mustardmustard
  • ¼ cup teriyaki sauce
  • ¼ cup bacon finely diced
  • ½ cup parmesan cheese
Directions:
  1. Preheat oven to 200°C4508323051_9d9d414fb7
  2. Place chicken in a baking dish. Brush on mustard so that it coats the chicken easily
  3. Pour on teriyaki sauce and then sprinkle with bacon pieces and grated cheese
  4. Bake for 30 minutes

Grilled Salmon

A quick and easy fish dish. Ingredients:
  • 1/3 cup light olive oil
  • 1½ tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1/3 cup soya sauce
  • 1/3 cup spring onions
  • 1 tablespoon grated fresh ginger
  • 2 or 3 garlic cloves
  • 4 large salmon fillets
Directions:
  1. salmon-518032_640In a small dish, mix the olive oil, sesame oil, rice vinegar, soy sauce, onions, garlic and ginger
  2. Place the salmon into the mixture to marinade
  3. Leave for 15 minutes as a minimum, although an hour is best if you’re not in a hurry)
  4. Take the salmon out of the marinade and grill for roughly 20 minutes, or until it can be flaked with a fork

Mushroom kebabs

A delightful vegetarian alternative. Ingredients:
  • ¾ cup sliced mushrooms
  • 3 peppers sliced (red, green and yellow)
  • Juice of 1 lemon
  • Olive oil
  • 1 garlic clove crushed
  • 2 teaspoons chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • Salt and pepper to taste
Directions:
  1. Thread mushrooms and peppers alternately on eight kebab skewers19108500019_6b5349c078_o
  2. Mix the olive oil, lemon juice, garlic, thyme, rosemary and seasoning. Brush the kebabs with this mixture
  3. Grill for about five minutes until the mushrooms are tender
