Light lunches for when you are busy in the office
If you have a hectic work life, you may be tempted to skip lunch, but this will do you no good at all. If you’re short on time, then as long as you have access to a basic kitchen, you can prepare some delicious and healthy meals in a jiffy.
To create a stir fry, all you need is a packet of stir fry vegetables, a readymade Chinese sauce, and some protein, such as shrimps, chicken pieces, or tofu. Fry the vegetables and protein in a wok at a high heat with a little oil, then add the sauce. The meal should be ready in about 1- minutes.
Though spuds take a while to cook, there is little to prepare. Put a large baked potato in a hot oven and return to work. After about 90 minutes take it out of the oven, add butter and grated cheese, and season with salt and pepper. For extra nutrition and flavour, why not enjoy it with a few salad leaves, tomatoes and olives?
As they require no cooking, salads are a quick lunch, not to mention a healthy one. One of the best and simplest examples is a Greek salad. Mix together mixed salad leaves, olives, sliced tomatoes and cubes of feta cheese. Toss in virgin olive oil, squeeze some fresh lemon juice onto it and season, or use a ready mixed salad dressing.
Packaged sandwiches are expensive and often not terribly impressive, so why not make your own? To add that gourmet touch, buy a luxury loaf from your baker of supermarket. From the deli, get salamis, Palma ham or other luxury meats. Add pickles, gherkins or olives for extra flavour.
Having little time for lunch is no excuse not to eat well. Of course, if your work pursuits mean staying at a Hallmark Hotel, quality lunches will not be a problem.
