Eat and drink
Thanks to Britain’s recent food renaissance, Bournemouth now has an array of rather good eating options. So it’s a measure of the excellence of Frederick’s that so many locals should chose to eat at the Hallmark Hotel Bournemouth Carlton. Undoubtedly, its setting helps. Not just the fabulous views of a shimmering ocean through large elegant Victorian windows, but the palatial interiors of a restaurant that opened its doors in 1947, with towering ceilings, cornicing and plasterwork, alongside mirrored columns, chandeliers and luxuriant drapes.
Of course, that’s not enough on its own. The food is superb. Don’t just take our word for it. Ask the experts. Frederick’s won the AA Rosette for it acclaimed locally sourced seasonal modern British menu (with a few European flourishes). Think starters like duck liver parfait and chicken, basil and mint terrine, followed by honey and peanut glazed duck breast, wild mushroom and spinach cannelloni and lemon and thyme roasted chicken. This is talented contemporary cooking, without flannel, where the superb ingredients speak for themselves.
We wouldn’t want to oversell. It’s not the Hallmark Hotel Bournemouth Carlton’s style. But our Sunday lunch with its array of traditional roasts is the stuff of local legend. How do we know? The locals tell us! We also offer a fabulous Afternoon Tea by The Sea with finger sandwiches, home made scones with clotted cream and jam. And families fear not. We never forget our younger guests. There are a variety of creative additions for the junior palate from ice cream in a cone and marshmallows to candy floss and cola cubes.
A final word to the wise. Frederick’s has a formal dress code (frankly, anything more casual just wouldn’t look right in the majestic surroundings). But our lounges serve lighter bites and snacks and the 24-hour room service has a family menu.

Meet our head chef
Name: Richard Allsopp
Experience: Started in college City and Guilds 7061/7062, 7071 & 7072. Then worked his way up through various 4* & 5* establishments, including; The Belfry Golf Resort, Stoke Park, Imperial Hotel Torquay. Richard has won various gold medals for the British Cooking Team. He is now in his 14th year at Hallmark Hotel Bournemouth Carlton as Head Chef.
Signature dish: Roasted Mudeford Brill, Scallop and Lobster, in a delicious shellfish and sherry sauce.

We offer a delicious breakfast buffet, including cooked and continental breakfast items. We are more than happy to provide table service for our guests on request. We also offer a wide choice of dishes cooked to order like omelettes, poached haddock, porridge, kippers and poached eggs. Vegetarian breakfast options are also available.
