Brasserie & Wine Bar
Central to each Hallmark Hotel is the Brasserie. The Hallmark Brasserie restaurants in Carlisle, Derby, Manchester, Bournemouth, Hull, Gloucester and Croydon offer fine dining in a relaxed and informal atmosphere.
Offering a selection of modern European dishes and good old classics, we use only the finest ingredients and create really tasty food at sensible prices. A selection of tapas is available early evening to accompany a pre-dinner drink.

Wine of the month
The current wine of the month is Fiori Montepulciano d'Abruzzo 2009/10 - Italy. This smooth, approachable red is the perfect complement to the change in seasons. With rustic, bramble and cherry flavours it can be enjoyed by the glass or bottle in all Hallmark Hotels. Only £19.95 per bottle or £4.80 for a 175ml glass.
Recipe of the month - Pan Fried Chicken
With bacon, silver skin onions, mushrooms, chunky chips and honey & mustard cream
- 60z of chicken fillet cut into strips
- 7 button mushrooms cut in half
- 1 rasher of bacon sliced into thin strips
- 4 silverskin onions diced
- Teaspoon of French mustard
- Teaspoon of Grain mustard
- Teaspoon of honey
- Table spoon of white wine
- Cup full of double cream
- Salt & pepper to season
- Pinch of rocket to garnish
- 1 large potato cut into ½ inch slices
Par boil potatoes until soft then deepfry in oil until golden brown
Meanwhilte, pan fry chicken in oil for 2 – 3 minutes until cooked
Remove from pan and add chopped onion, mushrooms and bacon and cook for 1-2 minutes
Add white wine cream, mustard and honey
Simmer until sauce thickens then season
Serve chicken in small pan, with fat chips stacked and a pinch of rocket to garnish
